2023 Ming Qian (Early April) Anji Bai Cha Green Tea

This is the top quality Anji Bia Cha green tea harvested in early spring.  The year's first picked Anji Bia Cha batch is most highly sought and is precious to the Chinese domestic tea drinkers.  We are very lucky to be able to try this year's premium quality Anji Bai Cha. 

This Anji Bai Cha is picked to have one bud and one Leaf.  After processing. the leaf looks like a pine needle which people in China named phoenix feather.  Its color is emerald green and yellow with a bright and oily appearance.  The tea tastes very sweet with a refreshing floral fragrance.

Anji Bai Cha is a very famous and upscale Chinese green tea from the Anji County of Zhejiang Province in China.  Bai Cha in Chinese means white tea. but Anji Bai Cha is actually a green tea.  The farmers pick the tea leaves in early April when the weather is still cold. when the synthesis of chlorophyll is blocked in the tea leaves.  Hence. the tea leaves appear in light/white color. but as the temperature rises. the green color will return.

This Anji Bai Cha has tender and slender leaves and is best made with lower temperature water at around 75º C (167º F).
